Ryk McIntyre started accepting work for the Legendary anthology a while ago but has since changed the title a bit and extended the deadline. The following is from his LiveJournal:
NEW TITLE: Legendary-Stories We Tell Today; Stories Our Children Will Tell Tomorrow
We are looking for poems about Ancient Legends*, Urban Myth, Fables, Ghost Stories, Faerie Tales, Nursery Rhymes, Fables, Folklore. In other words: Tributes to Persons, Places or Things that are legendary or should be.

* At this point we have nearly an historical Phalanx of poems regarding Greek Mythology. While this is awesome, we aren't doing an anthology of such. This means, the more people who submit poem(s) on this specific topic, the more will have to be cut for the representative sample. I'm not saying "Don't submit poems about Greek Mythology" so much as saying "We have a lot already" and the chance becomes greater of not having your poem accepted for the reason stated in the third sentence of this paragraph.
There ARE other mythologies out there y'know...
